Ingredients
- 1 pound/500g chicken or turkey mince
- 1 tbsp ghee
- 2 tbsp fish sauce
- 1 stem lemongrass, finely chopped
- Third cup chicken stock
- 3 tbsp lime juice
- 2 spring onions, chopped
- Half cup coriander, finely chopped
- Lettuce leaves, washed and finely sliced
- Quarter cup roasted unsalted almonds
- 1 small red chilli, sliced
- Lime wedges to serve
Preparation
- Heat ghee in a fry pan
- Fry mince over medium heat, until cooked, about 5 minutes
- Add fish sauce, lemon grass and stock and cook for 10 minutes
- Let mixture cool
- Then add lime juice, spring onions and coriander
- Mix well
- Arrange the lettuce and a plate and top with the chicken mixture
- Sprinkle on the nuts and chilli
- Serve with the lime wedges
