Ingredients

  • 1 pound/500g chicken or turkey mince
  • 1 tbsp ghee
  • 2 tbsp fish sauce
  • 1 stem lemongrass, finely chopped
  • Third cup chicken stock
  • 3 tbsp lime juice
  • 2 spring onions, chopped
  • Half cup coriander, finely chopped
  • Lettuce leaves, washed and finely sliced
  • Quarter cup roasted unsalted almonds
  • 1 small red chilli, sliced
  • Lime wedges to serve

Preparation

  1. Heat ghee in a fry pan
  2. Fry mince over medium heat, until cooked, about 5 minutes
  3. Add fish sauce, lemon grass and stock and cook for 10 minutes
  4. Let mixture cool
  5. Then add lime juice, spring onions and coriander
  6. Mix well
  7. Arrange the lettuce and a plate and top with the chicken mixture
  8. Sprinkle on the nuts and chilli
  9. Serve with the lime wedges
