Ingredients

  • 2 cups rice or oat milk
  • 1 cup low-fat yogurt or ricotta cheese                       
  • 5 egg yolks
  • 4 tbsp xylitol
  • 4 scoops whey protein powder
  • Half cup roasted hazlenuts (or any other nuts or berries)

Preparation

  1. Heat milk and yogurt or cheese together until just about to boil
  2. Whisk together egg yolks, xylitol and protein powder
  3. Whisk mixture into milk and yogurt
  4. Reduce heat to low
  5. Continue to whisk until the mixture thickens up
  6. Remove from the heat
  7. Chill in freezer until the mixture cool, then stir in nuts/berries
  8. Churn in an ice cream maker or freeze in two batches and then mix through until it sets and becomes ice cream

Note: Roasting nuts first adds flavor
