Ingredients
- 2 cups rice or oat milk
- 1 cup low-fat yogurt or ricotta cheese
- 5 egg yolks
- 4 tbsp xylitol
- 4 scoops whey protein powder
- Half cup roasted hazlenuts (or any other nuts or berries)
Preparation
- Heat milk and yogurt or cheese together until just about to boil
- Whisk together egg yolks, xylitol and protein powder
- Whisk mixture into milk and yogurt
- Reduce heat to low
- Continue to whisk until the mixture thickens up
- Remove from the heat
- Chill in freezer until the mixture cool, then stir in nuts/berries
- Churn in an ice cream maker or freeze in two batches and then mix through until it sets and becomes ice cream
