Ingredients

  • Bunch spinach
  • Bunch silverbeet
  • Bunch kale
  • 1 cup of broccoli
  • I large onion
  • 5 cloves garlic
  • 2 tbsp chopped parsley
  • 2 tbsp chopped coriander
  • 6-8 eggs
  • 1 tbsp ghee or good quality olive oil
  • Himalayan salt

Preparation

  1. Preheat the oven to 180oC
  2. Fry up the onion with the ghee
  3. When the oinion is cooking add the garlic and cook until golden brown
  4. Add chopped leafy vegies and broccoli, parsely, coriander and salt
  5. Cook until dark green
  6. Place the spinach mix into a baking tray
  7. Pour over the beaten eggs
  8. Bake in the oven for 25 minutes


Serve with a big salad and sprouts and a good sprinkle of freshly ground flaxseeds
