Ingredients

  •  6-8 fresh apples
  • Half cup water
  • 2 tbsp xylitol

Topping

  • Organic butter
  • 3 tbsp rice syrup, honey or maple syrup
  • Half cup LSA mix
  • Quarter cup sunflower seeds and almonds
  • Quarter cup dessicated coconut

Preparation

  1. Preheat oven to 180oC
  2. Peel and chop fresh apples
  3. Place in a pan with the water and xylitol and stew until tender, but not mushy
  4. Place the apple filling into a pie dish or large casserole dish
  5. Melt together the butter and the sweetener
  6. Combine dry topping ingredients into a bowl
  7. Mix in the melted butter
  8. Cover the apples with the topping
  9. Bake for 15-25 minutes, until the crust is crispy

P.S. LSA is a ground combination of linseeds (also known as flaxseeds), sunflower seeds and almonds - can usually be found in some supermarkets and health food stores.
