Ingredients

  • 1 cup cooked quinoa (pre-cook by absorption method on low heat with 2 cups water for 15-20 min)
  • Three quarters of a cup of milk
  • Zest of half a small lemon
  • Quarter cup dried apricots or peaches, roughly chopped
  • Quarter cup xylitol
  • Quarter cup chopped almonds
  • Quarter teaspoon ground cinnamon

Options

  • Add stewed fruit

Preparation

  1. Place all ingredients in saucepan with half cup water and gently simmer
  2. Cook without lid until thick and creamy. This will take approx. 10 minutes
  3. Can stick and burn easily, so watch carefully
  4. Add more liquid if too thick
