Ingredients
- 1 cup cooked quinoa (pre-cook by absorption method on low heat with 2 cups water for 15-20 min)
- Three quarters of a cup of milk
- Zest of half a small lemon
- Quarter cup dried apricots or peaches, roughly chopped
- Quarter cup xylitol
- Quarter cup chopped almonds
- Quarter teaspoon ground cinnamon
Options
- Add stewed fruit
Preparation
- Place all ingredients in saucepan with half cup water and gently simmer
- Cook without lid until thick and creamy. This will take approx. 10 minutes
- Can stick and burn easily, so watch carefully
- Add more liquid if too thick
