Slow Beef Soup
This recipe is great cooked in a slow cooker. The beef is tender and the sauce rich and full of goodness.
Ingredients
- 1.2 kg organic grass fed beef, diced
- 1 large onion
- 2 sticks of celery
- 2 cans organic tomatos
- 1 red capsicum
- 2 carrots
- 3 tbsp tomato paste
- Half litre stock
- 1 tsp dried rosemary or 2 fresh sprigs
- Half tsp dried thyme or 2 fresh sprigs
- Sprinkle of dried yeast extract
- 1 tsp kelp flakes
Options
Fresh silverbeet or spinach
After serving top with sprouts and sprinkle ground flaxseeds
To thicken the soup add 1 tbsp arrowroot powder
Preparation
- Put all the ingredients into the slow cooker and give a good stir. Put the lid on and leave.
- Season to taste with Himalayan sea salt before serving.
