Slow Beef Soup

This recipe is great cooked in a slow cooker. The beef is tender and the sauce rich and full of goodness.

Ingredients

  • 1.2 kg organic grass fed beef, diced
  • 1 large onion
  • 2 sticks of celery
  • 2 cans organic tomatos
  • 1 red capsicum
  • 2 carrots
  • 3 tbsp tomato paste
  • Half litre stock
  • 1 tsp dried rosemary or 2 fresh sprigs
  • Half tsp dried thyme or 2 fresh sprigs
  • Sprinkle of dried yeast extract
  • 1 tsp kelp flakes

Options

Fresh silverbeet or spinach
After serving top with sprouts and sprinkle ground flaxseeds

To thicken the soup add 1 tbsp arrowroot powder

Preparation

  1. Put all the ingredients into the slow cooker and give a good stir. Put the lid on and leave.
  2. Season to taste with Himalayan sea salt before serving.
