Ingredients

  • 4 eggs
  • Quarter cup oat milk
  • 1 Tbsp flaxseed, sunflower, pumpkin and sesame seed mix (add after cooking)
  • Fresh herbs, such as chives, basil, oregano and thyme
  • Himalayan salt to taste

Options

  • Would be great served with focaccia bread (see baking recipes)
  • Sliced sundried tomatoes or fresh tomato
  • Cooked vegetables, fresh spinach
  • Organic grass-fed ham, organic chicken, oily fish (sardines, mackerel, salmon, kippers)
  • Another great option would be to serve in a nori roll
  • Serve with a salad and fresh sprouts

Preparation

  1. Mix all ingredients together

  2. Heat a fry pan with a small blob of ghee/butter

  3. Put egg mixture into pan and cook until done

  4. Add freshly ground seeds
