Ingredients

  • 2 Tbsp finely chopped herbs (parsley, mint, oregano, basil, whatever you like)
  • 1 green onion, finely chopped
  • 8 eggs
  • One third block of firm feta cheese, crumbled
  • One third cup grated cheddar cheese

Options

  • Quarter cup sundried tomatoes
  • Chives
  • Spinach
  • Free range chicken
  • Organic grass-fed bacon

Preparation

  1. Preheat the oven to 180oC
  2. Grease four ramekin dishes
  3. Divide the herbs and onion into the dishes
  4. Break two eggs into each dish
  5. Sprinkle with the combined cheeses
  6. Bake, uncovered, for approximately 10 minutes, or until the eggs are set
  7. Serve with a fresh salad
