Ingredients
- Quarter cup pepitas
- Quarter cup sunflower seeds
- 4 Tbsp sesame seeds
- 1 leek, rinse and chopped
- 2 bunches English spinach or large bunch silver beet
- Quarter cup sun-dried tomatoes
- 1 medium sized feta block, lightly crumbled
- 8 eggs
- Quarter cup rice milk
- Half cup fresh basil and small amount oregano, torn up
- 1 Tbsp tamari
- Pinch of salt
- 1 Tbsp ghee
Preparation
- In a fry pan, melt the ghee and fry up the leeks until golden
- Add tamari for flavor
- Add spinach and cook on low heat until wilted
- Add the sun-dried tomatoes, feta and seeds
- Turn heat to very low
- In a bowl beat up the eggs, milk, herbs and salt
- Put the spinach mix in a baking dish and pour over the eggs
- Put into a moderate oven and bake for 15 minutes or until eggs are cooked
- Serve with steamed vegetables and salad
