Ingredients

  • Quarter cup pepitas
  • Quarter cup sunflower seeds
  • 4 Tbsp sesame seeds
  • 1 leek, rinse and chopped
  • 2 bunches English spinach or large bunch silver beet
  • Quarter cup sun-dried tomatoes
  • 1 medium sized feta block, lightly crumbled
  • 8 eggs
  • Quarter cup rice milk
  • Half cup fresh basil and small amount oregano, torn up
  • 1 Tbsp tamari
  • Pinch of salt
  • 1 Tbsp ghee

Preparation

  1. In a fry pan, melt the ghee and fry up the leeks until golden
  2. Add tamari for flavor
  3. Add spinach and cook on low heat until wilted
  4. Add the sun-dried tomatoes, feta and seeds
  5. Turn heat to very low
  6. In a bowl beat up the eggs, milk, herbs and salt
  7. Put the spinach mix in a baking dish and pour over the eggs
  8. Put into a moderate oven and bake for 15 minutes or until eggs are cooked
  9. Serve with steamed vegetables and salad
