Spicy Sardines

Ingredients

  • 2 fresh sardines
  • 1 garlic clove, crushed
  • 1 tablespoon olive oil
  • 2 tablespoons orange juice
  • 1 teaspoon hot paprika
  • 1 teaspoon finely chopped fresh oregano

Options

  • use tuna, salmon, herring or mackerel instead of sardines

Preparation

  1. Lightly cook the sardines with the other ingredients
  2. Divide sardines onto four plates and serve with Orange and Olive Salad

Orange and Olive Salad

Ingredients

  • 2 medium oranges, segmented
  • One third cup seeded black olives, chopped coarsely
  • 2 handfuls of salad leaves
  • 1 fresh long chilli
  • 1 tablespoon orange juice
  • 1 tablespoon flaxseed oil
  • Half teaspoon finely chopped oregano
  • 1 tablespoon olive oil

Preparation

  1. Combine ingredients in bowl to make dressing and mix gently

Serves 4
