Spicy Sardines
Ingredients
- 2 fresh sardines
- 1 garlic clove, crushed
- 1 tablespoon olive oil
- 2 tablespoons orange juice
- 1 teaspoon hot paprika
- 1 teaspoon finely chopped fresh oregano
Options
- use tuna, salmon, herring or mackerel instead of sardines
Preparation
- Lightly cook the sardines with the other ingredients
- Divide sardines onto four plates and serve with Orange and Olive Salad
Orange and Olive Salad
Ingredients
- 2 medium oranges, segmented
- One third cup seeded black olives, chopped coarsely
- 2 handfuls of salad leaves
- 1 fresh long chilli
- 1 tablespoon orange juice
- 1 tablespoon flaxseed oil
- Half teaspoon finely chopped oregano
- 1 tablespoon olive oil
Preparation
- Combine ingredients in bowl to make dressing and mix gently
