Salad
Ingredients
- Big bunch of lettuce leaves, including rocket
- 10 cherry tomatoes
- Quarter red cabbage
- 6 small broccoli florets
- Half a cup of quinoa
Options
- Boiled egg
- Grated beetroot
- 1 Lebanese cucumber
- Avocado
- Olives
- Pickles
- Himalayan sea salt
- Ground flaxseed
Preparation
- Rinse the quinoa. Place the quinoa in a pot with 1 cup water and bring to the boil. Simmer until the water evaporates (15-20 minutes)
- Let the quinoa cool for the salad
- Wash all the salad ingredients and slice up
- Put everything, including any options, into a big bowl and toss gently
Salad dressing
- 1 clove of garlic
- 2 tbsp flaxseed oil
- Juice of half a lemon
- 1 tsp wholegrain mustard
- 2 tbsp soya mayo
Preparation
- Mix together well and place into a small container to use as needed on the salad
