Salad

Ingredients

  • Big bunch of lettuce leaves, including rocket
  • 10 cherry tomatoes
  • Quarter red cabbage
  • 6 small broccoli florets
  • Half a cup of quinoa

Options

  • Boiled egg
  • Grated beetroot
  • 1 Lebanese cucumber
  • Avocado
  • Olives
  • Pickles
  • Himalayan sea salt
  • Ground flaxseed

Preparation

  1. Rinse the quinoa. Place the quinoa in a pot with 1 cup water and bring to the boil. Simmer until the water evaporates (15-20 minutes)
  2. Let the quinoa cool for the salad
  3. Wash all the salad ingredients and slice up
  4. Put everything, including any options, into a big bowl and toss gently

Salad dressing

  • 1 clove of garlic
  • 2 tbsp flaxseed oil
  • Juice of half a lemon
  • 1 tsp wholegrain mustard
  • 2 tbsp soya mayo

Preparation

  1. Mix together well and place into a small container to use as needed on the salad
