Ingredients
- 4 salmon steaks
- spinach and Asian greens, wilted
- Broccoli florets, steamed
Marinade
- Quarter cup lemon juice
- Quarter cup tamari
- Quarter cup mirin
- 1 tbsp xylitol
- 2 tbsp ginger, grated
- 1 tsp paprika
Preparation
- Combine all the marinade ingredients in a bowl
- Mix well
- Add salmon steaks one at a time and coat well
- Place the salmon steaks into a baking dish
- Pour over remaining marinade
- Put into the fridge for at least one hour
- Remove the salmon and place onto a lightly greased baking tray
- Grill the salmon for 4 minutes
- Turn the salmon over and brush with the marinade and grill other side for a further 4 minutes
- Sieve the marinade and place in a pan
- Bring to the boil and then simmer until reduced
Serve the fish on a bed of wilted spinach and Asian greens and steamed broccoli
