Ingredients

  • 4 salmon steaks
  • spinach and Asian greens, wilted
  • Broccoli florets, steamed

Marinade

  • Quarter cup lemon juice
  • Quarter cup tamari
  • Quarter cup mirin
  • 1 tbsp xylitol
  • 2 tbsp ginger, grated
  • 1 tsp paprika

Preparation

  1. Combine all the marinade ingredients in a bowl
  2. Mix well
  3. Add salmon steaks one at a time and coat well
  4. Place the salmon steaks into a baking dish
  5. Pour over remaining marinade
  6. Put into the fridge for at least one hour
  7. Remove the salmon and place onto a lightly greased baking tray
  8. Grill the salmon for 4 minutes
  9. Turn the salmon over and brush with the marinade and grill other side for a further 4 minutes
  10. Sieve the marinade and place in a pan
  11. Bring to the boil and then simmer until reduced

Serve the fish on a bed of wilted spinach and Asian greens and steamed broccoli
