This cake contains no flour
Ingredients
- 2 large organic navel oranges
- 6 eggs
- 2 and half cups almond meal
- 1 and half cups xylitol
- Half cup water
- Zest of 1 orange
Preparation
- Wash the oranges and scrub the skins. Best to use organic oranges
- Put whole oranges into a pan, cover with water and boil for 2 hours
- Drain and leave to cool
- Pre-heat the oven to 190oC
- Line a spring-form tin with baking paper
- Put the oranges in a food processor or blender and process until smooth
- Whisk the eggs and add oranges, almond meal and 1 cup of the xylitol. Mix well
- Put the mixture into the prepared tin
- Bake for 1 and quarter hours, or until a skewer comes out clean
- Leave to cool for 5 minutes
- Put the remaining xylitol into a pan with the water and orange zest
- Stir over low heat until the xylitol has dissolved
- Cook on high heat while continually stirring until it forms a syrup
- Serve the cake with a spoonful of syrup over the top
