This cake contains no flour

Ingredients

  • 2 large organic navel oranges
  • 6 eggs
  • 2 and half cups almond meal
  • 1 and half cups xylitol
  • Half cup water
  • Zest of 1 orange

Preparation

  1. Wash the oranges and scrub the skins. Best to use organic oranges
  2. Put whole oranges into a pan, cover with water and boil for 2 hours
  3. Drain and leave to cool
  4. Pre-heat the oven to 190oC
  5. Line a spring-form tin with baking paper
  6. Put the oranges in a food processor or blender and process until smooth
  7. Whisk the eggs and add oranges, almond meal and 1 cup of the xylitol. Mix well
  8. Put the mixture into the prepared tin
  9. Bake for 1 and quarter hours, or until a skewer comes out clean
  10. Leave to cool for 5 minutes
  11. Put the remaining xylitol into a pan with the water and orange zest
  12. Stir over low heat until the xylitol has dissolved
  13. Cook on high heat while continually stirring until it forms a syrup
  14. Serve the cake with a spoonful of syrup over the top
