Ingredients
- 1 cup LSA mix, freshly ground
- 1 cup brown rice flour or oat bran
- Quarter cup desiccated coconut
- Half cup ground hazelnuts or almonds
- 4 tsp baking powder
- 1 cup xylitol
- 4 organic free-range eggs
- 2 tsp vanilla essence
- 1 cup fruit (peaches/ apples/ berries)
- 200ml rice or oat milk or low fat yogurt
- 180ml water
Preparation
- Preheat oven to 180oC
- Combine all ingredients, do not over mix
- Grease some muffin trays with ghee
- Divide mixture between muffin trays and make sure some of the fresh fruit is in each muffin
- Bake for 25-30 minutes, until brown and risen
- Remove from oven and let stand for 5 minutes, then remove from the tray and cool on a rack
