Ingredients

  • 1 cup LSA mix, freshly ground
  • 1 cup brown rice flour or oat bran
  • Quarter cup desiccated coconut
  • Half cup ground hazelnuts or almonds
  • 4 tsp baking powder
  • 1 cup xylitol
  • 4 organic free-range eggs
  • 2 tsp vanilla essence
  • 1 cup fruit (peaches/ apples/ berries)
  • 200ml rice or oat milk or low fat yogurt
  • 180ml water

Preparation

  1. Preheat oven to 180oC
  2. Combine all ingredients, do not over mix
  3. Grease some muffin trays with ghee
  4. Divide mixture between muffin trays and make sure some of the fresh fruit is in each muffin
  5. Bake for 25-30 minutes, until brown and risen
  6. Remove from oven and let stand for 5 minutes, then remove from the tray and cool on a rack
