Ingredients

  • 1 cup spelt flour
  • 1 and half tsp baking powder
  • Two thirds a cup of organic coconut milk
  • 2 tbsp natural plain yogurt
  • 1 tsp cinnamon powder or 1/4 tsp vanilla essence
  • 3 eggs lightly beaten
  • Ghee for frying
  • 1 and half cups berries
  • Extra yogurt
  • Maple syrup if desired

Preparation

  1. Combine flour and baking powder and add milk and yogurt. Mix well
  2. Cover and leave in the fridge overnight if you have time
  3. Then add vanilla essence or cinnamon, and eggs and whisk
  4. Check the consistency. If you need to you can add more milk to make a lighter pancake
  5. Heat 1 tsp ghee in fry pan
  6. Pour 2 tbsp of the mixture into the pan. Roll it around to coat the base of the pan
  7. Cook the pancake until you see small bubbles forming and the edges start to look cooked
  8. Turn the pancake over
  9. Cook for a further minute
  10. Better to cook pancakes on a lower heat so you do not burn the ghee

Options

  • Serve with berries and yogurt with a drizzle of maple syrup
  • Also great with hazelnut spread and bananas
